Holiday Nut Loaf
From Vegan Homestyle: Simple Recipes For Healthy Living by Kay Hansen of the Emerald Valley Wellness Center.


Vegan Homestyle Holiday Nut Loaf

Ingredients:
1 cup chopped onion
1 cup finely chopped celery
¾ cup gluten flour
2/3 cup chopped Brazil nuts (or walnuts)
2 tablespoons wheat germ
2 cups soaked garbanzos
1 cup water
2 tablespoons Bragg® liquid aminos
1 teaspoon salt
1/8 teaspoon garlic powder
½ cup water

Directions:

Soak 1 cup of dry garbanzo beans in water overnight. Drain. Sauté the onion and celery until tender. Place in a mixing bowl with the gluten flour, nuts and wheat germ. Blend the next five ingredients together until smooth. Add to mixing bowl. Rinse blender with the last ½ cup of water and add to mixture.
Mix well.
Spoon into an 8" x 8" baking dish lined with baking parchment or sprayed with non-stick spray. Bake covered for 45 minutes at 350 degrees.
Uncover and bake 15 minutes more. When cool, turn out onto a platter. Garnish with roasted vegetables and serve with Cashew Gravy.
Reheats and freezes well. Makes great sandwiches.
Makes 16 servings
