Cucumbers in "Sour Cream"
From Aebleskiver and More - A Sampling of Danish Recipes by Lisa Steen Riggs.

Instead of sour cream this recipe uses another product from Tofutti: Sour Supreme. You can substitute Sour Supreme in any recipe that calls for sour cream.

SERVES 6-8

Ingredients:

1 tablespoon salt
1 teaspoon salt
3 English cucumbers, medium sized, sliced thin
1 sweet onion, medium sized, sliced thin
1/2 cup Tofutti Sour Supreme
1 tablespoon sugar
1 tablespoon lemon juice
1 dash pepper

Directions:
 
Mix 1 tbsp salt with cucumber and onion lices; set aside for 15-20 minutes.

In another bowl, mix together remaining ingredients.

Rinse the salted cucumber and onion in clear water; press out liquid.

Stir in the sour cream mixture. Chill well before serving.
