Thai Cole Slaw (mild, not spicy)

Normally Thai food is VERY spicy. This is totally mild. If you want to make this a bit more spicy make your dressing in advance and add some chili pepper flakes to it. For a garnish sprinkle some roasted peanut on top of the finished slaw. If making this for potluck, I would suggest not adding the dressing too early, the cabbage may become wilty and loose some of it's crispness.
 
Number of Servings: 15 (potluck size)

Ingredients
 
Dressing:
6 tbsp rice vinegar
6 tbsp vegetable oil
5 tbsp soy sauce
3 tbsp brown sugar
2 tbsp minced, peeled fresh ginger
1/2 tbsp minced garlic
2 tbsp no sugar added peanut butter

Slaw:
5 cups shredded green cabbage
2 cups shredded red cabbage
2 medium carrots, grated
1 bunch green onion, sliced
1/2 bunch cilantro

  Combine the dressing ingredients and mix well into slaw mixture.
