Bok Choy With Oriental Dressing

Bok Choy With Oriental Dressing

SERVES 3 -4

Ingredients:

1 lb bok choy
1 tablespoon rice vinegar
2 teaspoons Dijon mustard
2 teaspoons soy sauce
1 teaspoon sugar
1 small garlic clove, finely chopped
1/2 tablespoon fresh gingerroot, finely chopped or minced ginger from the jar

Directions:
Separate bok choy leaves and rinse under cold water to clean. Place in steamer and steam until stalks are crispy tender.
Plunge steamed bok choy into ice cold water and drain and roughly chop.

Combine vinegar, mustard, soy, sugar, garlic, and mix well.

Pour Dressing over the chopped bok choy.
