Champ

Champ is an Irish dish, made by combining mashed potatoes and chopped scallions (green onions) with butter and milk, and optionally, salt and pepper. It is simple and inexpensive to produce. In some areas the dish is also called "poundies."


Ingredients:
2 pounds russet potatoes, peeled, cut into 1-inch pieces
1/2 cup soy creamer
1/4 cup Earth Balance vegan margarine
1 bunch green onions, sliced
Salt and pepper to taste

Directions:

Cook potatoes in pot of boiling salted water until very tender, about 15 minutes.
Meanwhile, bring soy creamer and Earth Balance to simmer in heavy small saucepan over medium heat, stirring often. Mix in green onions. Remove from heat. Cover and let steep while potatoes cook.

Drain potatoes thoroughly. Return potatoes to same pot and mash. Add cream mixture and stir until blended. Season to taste with salt and pepper.
