Tofurky Take 2

If you are a fan of Tofurky instead of turkey for Thanksgiving, you might consider preparing it this way.
Recipe Courtesy:  Joan A. of Maricopa, California.  Joan provides an alternate preparation for the Tofurky roast.

Ingredients:

2 tablespoons olive oil
1 large onion, sliced very thin
3/4 cup dried sour cherries
2 tablespoons brown sugar
2 tablespoons balsamic vinegar
1 tablespoon dijon mustard
3 tablespoons apple cider
1 Tofurky roast

Directions:

Preheat oven to 350 degrees.
Pour oil into large skillet and heat over medium flame. Add onion, cherries, brown sugar and vinegar and cook, stirring occasionally, until onions are soft, about 10 minutes. Stir in mustard and apple cider, and simmer for two more minutes.
Slice Tofurky evenly into 6 slices.  Place in caserole dish, cover with onion mixture. Cover casserole with lid or foil. Place in center rack of oven. Bake for 20 minutes. Uncover and bake for an additional 10 minutes.
Yield:  6 servings.
