Dad's CaliTato Mash

Dad's Infamous CaliTato Mash

Serve with some veggie gravy and a side of cooked mixed veggies on cold, lazy nights.

Ingredients:

    1/2 medium cauliflower, chopped
    6 medium potatoes, peeled and chopped
    1 clove garlic, crushed
    2 tablespoons olive oil
    1/4 cup soy milk
    2 tablespoons chopped parsley

Directions:

Boil cauliflower and potato (together) until soft.  Mash with a stab-mixer to make it really nice and smooth or put through a ricer.

Add garlic, parsley, olive oil and salt and pepper.
