Delicious Taco Pie!

This is a recipe I almost didn't post, not because it isn't tasty, but it seems more like vegan junk food compared to most of the other recipe I have posted and uses a lot of convenience products. All of that aside, it's easy and quick to prepare and a hit with kids and teens. With everything in this recipe, no one will even notice it is vegan. So, enjoy!

SERVES 4 -6 , 1 Pie

Ingredients:

1 lb fake burger crumbles (Morning Star works well)
1/2 cup diced onions
1 package vegan taco seasoning (most brands are)
1/4 - 1/3 cup water
1 (8 ounce) can refrigerated crescent dinner rolls (I believe Pillsbury are vegan)
2 cups crushed corn chips (your favorite brand)
1 cup vegan sour cream (Tofutti brand works the best, available at health food stores)

Toppings:
 
Lettuce, shredded
Tomato, diced
Olives, sliced
Guacamole
Salsa

Preheat oven to 375 degrees.

Sauté the onion until soft, add the burger crumbles and stir until heated through.
Stir in the seasoning mix and water (I would only use 1/4 cup to start with and then add more water gradually if you need it).
Simmer the"meat" mixture about 5 minutes.
Separate the crescent rolls; Press into an ungreased pie pan to form a crust.
Sprinkle 1 cup of the corn chips over the crust.
Spoon the "meat" mixture over the crust and chips.
Spread the sour cream over the meat mixture.
Sprinkle the remaining chips on top.

Bake 20- 25 minutes.

Remove from oven, serve in wedges and let everyone top their serving as desired from the following: shredded lettuce, diced tomatoes, sliced olives, guacamole, and your favorite salsa.
