Veggie Chili Recipe

This recipe would go well with cornbread and a salad.


Veggie Chili Recipe

SERVES 6

2 (14 1/2 ounce) cans stewed tomatoes
1 (8 ounce) can tomato sauce
1 (19 ounce) can red kidney beans, rinsed
1 onion
1 red pepper
1 green pepper
1 large zucchini
1/4 teaspoon cumin
1/4 teaspoon chili powder
1 teaspoon garlic powder
Add all ingredients to a pot.
Bring to a boil and simmer for 2 to 3 hours.

Have never heard of zucchini used for vegie chilli.
Will have to see if I can pick some up and try this with the corn muffins
