"Thai" Style Pineapple Fried Rice - Pad Kao Saparod (not spicy)

Of course no Thai person would eat such a non-spicy dish, but it is still tasty!

SERVES 4 -6

4 tablespoons vegetable oil
1 onion, finely chopped
3 cloves garlic, crushed
1 cup finely chopped carrot
1 cup finely chopped green beans
1 cup fresh pineapple
3 cups cold cooked rice (preferably jasmine or brown rice for a healthier version)
1 tablespoon ketchup (or tomato puree)
1 Tablespoon Soy sauce (or more to taste)
4 tablespoons chopped green onions
4 tablespoons chopped fresh cilantro

Garnish: 1 cucumber, thinly sliced

Directions:

In a wok, heat oil over medium heat and stir-fry onion and garlic until golden brown.
Add the carrots and green beans and stir-fry 2 minutes.
Add pineapple, rice, ketchup, and soy sauce, mixing well and stir-frying for 3 minutes. Taste and adjust soy sauce amount if needed. Remove from heat and stir in the cilantro and green onions. Garnish with cucumber.
